FINALLY!! Matt and I can scream it from the roof top…we’re opening a restaurant!
We feel so relieved that we can finally talk about what we’ve been working on. I’ve been so MIA from The Middle Edit and life in general because all of my time, the last few months, have been dedicated to this restaurant, real estate and just being pregnant. It’s been hard but it feels so great that I can finally share this part of my/our life.
A Little Background
Since I haven’t really shared too much about this part of our life, I figured now is the perfect time. Matt and I both have been in the restaurant industry for a majority of our life. Matt has been in the restaurant industry since he was 14 years old & he’s now 34 so 20 years! He started out as a dishwasher, part-owned a breakfast place at 18 years old, graduated from Culinary School in Las Vegas, traveled the country as an Executive Chef and now is a Regional Executive Chef for a steakhouse company. For the past 5 years, he has spent a majority (at least 75%) of his year traveling the country, overseeing different steakhouse locations.
I’ve worked in the restaurant industry since I was 18 years old minus the last 4 years. While living in Indianapolis restaurants were my life. I started out as a hostess in a chain restaurant downtown Indianapolis. At 22 or 23 years old, I started working for a steakhouse group in downtown Indianapolis. I started as a hostess and ended up working my way up within the company and became Director of Operations. I was involved in 4 restaurant openings (steakhouses, nightclub and a bar & grille), a full rebrand, selling of restaurants and a purchase of an existing restaurant. Thankfully, I worked with some of the best people in the Indianapolis restaurant industry. I saw and learned a lot in those 5 years.
How We Got Here
This restaurant has been a long time coming. Matt and I moved from Indianapolis to Michigan in 2015. Making the move from Indianapolis, where we lived for 10 years, wasn’t an easy decision but we always had a “plan” of what we wanted our future to look like. That future included opening a restaurant in the area where we grew up. In 2017, we started the process of looking at restaurants and purchased our current building almost a year and half ago. We didn’t quite know what we were going to do with it though. Of course, we knew that we wanted to eventually open a restaurant in that space but didn’t know what it would be or when it would happen. We decided at the end of 2018 that we were going to start the process and not look back. This has always been a dream of ours so we decided why not start now?!
With Matt traveling so much, I knew that this project was going to be mine to get off the ground. Since I have experience opening restaurants, I felt pretty confident I could do it with the help from Matt, when needed. We’ve spent months and months meeting, planning and discussing every little detail. The building has pretty much been torn down and built back up again. So here we are…August 2019 and we are so close to opening. Matt is stepping away from his job that he has loved for so many years and is starting a new chapter. I’ve had to immerse myself into getting the restaurant off the ground while Matt continues traveling for his job, all while being pregnant for the first time. We’ve been a pretty great team and I don’t think we could have done this without each other.
It feels so, so good to say this….Bird Dog will be open at the beginning of October! I can finally share this part of my life with you and that makes me so happy. I’ll be sharing more details and updates over the next few weeks. I will be sharing a lot of it here because it will be a huge part of my life but I’ll be sharing a majority on our Bird Dog accounts as well. We are probably crazy for opening a restaurant and having a baby all within the same month but that’s what life is all about…right?!
