My 2nd Thanksgiving as a vegan! Almost any food can be made vegan..literally! It is hard to get family together and accommodate everyone’s dietary restrictions. We have 4 vegans in our family and the rest are not. Last year everyone was assigned a dish to bring and they made a few changes to the traditional Thanksgiving dishes to make them vegan friendly. Everyone was shocked at how easy and delicious it was. It tasted exactly like the traditional Thanksgiving dinner that I’ve been used to for 30 years. This year, I’ve made all of the same traditional dishes; green bean casserole, sweet potato casserole, stuffing casserole and brussels sprouts. For each dish, I have added some extra ingredients to make it even more delicious.
Brussels sprouts are one of my favorite vegetables! This is a dish I make all year round but is a perfect addition to any holiday dinner too. These oven roasted brussels sprouts are so easy with only 7 ingredients, all mixed in one bowl! View the recipe (here).
Green Bean Casserole
The dish that only comes around during the holiday season…green bean casserole! This vegan casserole has 10 ingredients and topped with chili panko and fried onions. Sweet Potato Casserole
Sweet Potato Casserole is probably my favorite Thanksgiving dish! Every year my Grandma makes the sweet potato casserole (non-vegan) which is always so delicious. Last year was the first year she made it vegan. The only differences being, switching out the butter for vegan butter and regular marshmallows with vegan marshmallows. Pretty easy! But this year I wanted to put a spin on it by adding the sweet and spicy candied pecans on top. View the recipe (here).
Stuffing! Another staple to the traditional Thanksgiving dinner. Last Thanksgiving was the first year eating a full Vegan Thanksgiving dinner so I was a little worried I would be missing on stuffing, my favorite dish! This gravy recipe is perfect! I stumbled across this recipe by My Darling Vegan last year and have been using it ever since.
