Watermelon is one of my favorite things about summer. During the summer there are always a ton of cookouts and parties to attend. Going to a party empty handed is never ideal so a watermelon salad is the easiest, crowd pleasing dish to bring…in my opinion. My favorite version of a watermelon salad is this watermelon salad with feta, basil and kalamata olives.
As a kid, watermelon was my favorite snacks in the summertime. Now as an adult I always have to have a stock of it in our refrigerator during the summer months. Watermelon by itself is so delicious but for a party I like to “jazz it up” a bit and make it more of a salad. This watermelon salad with feta has 4 ingredients; feta, basil, kalamata olives and watermelon. It is one of the quickest, easiest side dishes to make.
Sprinkling a bit of salt to a piece of watermelon is something I see so many people do including my Grandma. Adding in the kalamata olives and feta cheese adds that bit of salt flavor with the sweetness of the watermelon. You will get the saltiness without actually having to add the unneeded, extra salt. The basil is the perfect combination to give it that summer, fresh taste too. Everything is better with a little basil or mint added to it.
If you want to make the salad into more of a salad with greens, add some arugula. Place the watermelon with feta, basil and kalamata olives on top of a bed of arugula and serve. I use the juiciness from the watermelon as my dressing too! You can add whatever dressing you want though…olive oil & vinegar, etc.
You can never go wrong if you bring a watermelon salad to a party…promise!
