There are so many options available now in regards to meatless burgers. But there is nothing like a homemade vegan black bean burgers topped with all of your favorite toppings. So yummy! In my early 20’s, this was a recipe I always would make because it was easy and quick. The only problem is it called for eggs. When I changed my diet to plant-based, I had to figure out what would substitute the egg to hold the patty together. Enter ground flax seeds! Worked perfectly and added in another great nutrient.
This vegan black bean burger recipe is so quick and easy! It takes just 5 minutes to prep and about 20 minutes to cook. Rinse and mash the black beans with a potato masher. Once the black beans are mashed, add in all the other ingredients; red pepper, cilantro, jalapeno (for spice, optional), ground flax seed, cumin, paprika, salt and pepper. Mix together then scoop out the mixture to form into a patty and place onto a parchment paper covered cookie sheet.
The cook time may depend on what you prefer. I like my vegan black bean burgers a little more soft versus dry so I will cook them for 20 minutes. If you want them to be more dry cook them for a little longer. Once they are done cooking, remove from the oven and top with your favorite toppings! I love a double patty topped with guacamole, and crisp lettuce. If I don’t feel like making guacamole, I will put mashed avocado on top and sprinkle my favorite Trader Joe’s seasoning- chili lime. It’s so good!
