I think I’ve said this 100 times but coming up with new, easy ideas to cook for dinner is always a challenge. This Trader’s Joes’s Gorgonzola Gnocchi is so good, I’m addicted to it!
Last week my sister and I were talking about what products we love from Trader Joe’s. She mentioned how good their gnocchi was. The next time I was in Trader Joe’s I made sure to grab a couple bags of the gorgonzola gnocchi. The first time I had it, I ate the whole bag without adding any additional ingredients in. It was good by itself but it is even better “doctored” up.
The best part about this pasta is anything can be added into it. I still don’t eat meat but I know that my husband likes meat added into dishes sometimes. Chicken breast is the easiest meat to cook, in my opinion. I popped it into the oven for about 30 minutes, let it cool and sliced it up to be added into his pasta. While the chicken breast was cooking, I sautéed asparagus and cherry tomatoes (I love this combination!).
The gorgonzola gnocchi is so easy to cook- you empty the bag into a sauté pan and let it cook for about 7 minutes.
Another one of my favorite Trader Joe’s finds is their Vegan Kale, Cashew and Basil pesto. I added in a couple tablespoons of the pesto into the cooked gnocchi. Final step is to add in your sautéed vegetables, chicken (if desired) and it’s ready to be served.
I can easily eat a whole bag of this gnocchi by myself…no shame! But with all of the ingredients added into it, I find that one bag is enough for 2 people. It’s seriously the cheesiest, most delicious, non-homemade pasta I’ve ever found in a store. It will 100% not disappoint.
