Casseroles are the staple side dishes of Thanksgiving dinner. Sweet potato casserole is in my top 3 favorite Thanksgiving dishes next to pumpkin pie and green bean casserole.
Every year my Grandma makes the sweet potato casserole (non-vegan) which is always so delicious. Last year was the first year she made it vegan. The only differences being, switching out the butter for vegan butter and regular marshmallows with vegan marshmallows. Pretty easy! But this year I wanted to put a spin on it by adding the sweet and spicy candied pecans on top.
The sweet potato casserole itself only consists of 5 ingredients:
Topped with the sweet and spicy pecans…pretty easy and takes a little over a hour to cook.
Anytime I can add nuts to a dish, I try! These sweet and spicy pecans are so so good. Buttery, sweet, spicy and toasted…yum! Not only are they a great topping but they are a great snack too. If you want to eat them as a snack, I suggest refrigerating for a couple hours to harden the vegan butter and sugar mixture.
Even though this is a Thanksgiving dish, it would be a great side dish for any holiday party or gathering. All of the sweet tooth lovers will enjoy this one!
