This simple edamame and corn salad was one of the first dishes I made when I started my plant-based lifestyle. After my hunt for more protein and a lunch that didn’t consist of lettuce, I found the shelled edamame at a local health food store. Edamame has 17 grams of protein in 1 cup! I was shocked when I read that.
I’ve said time and time again that I hate to make dishes with a lot of ingredients. I hate to buy a lot of ingredients for just one dish especially lunch type dishes. This edamame and corn salad is right up my alley because the base has 5 ingredients. Just 5! I’ve made this dish for a few parties and everyone loved it. 15 minutes or less, 5 main ingredients and it looks pretty too, win!
The 5 main ingredients are; shelled edamame, corn, tomatoes (preferably cherry), red onion and carrots. I made the sauce from things I had in the refrigerator and spice cabinet. I love soy sauce and edamame together so that was my base for the sauce. One thing I’ve learned from Matt (on top of many others) don’t be afraid to use the ingredients that you have. I’m working on it but this sauce turned out pretty good for just “whipping” it together.
This dish will make the perfect light lunch or a great side dish for a party. It is flavorful and tangy!
