This is seriously the best breakfast burrito ever!
We finally had a Trader Joe’s open in our area about 6 months ago (yes, we are that far behind!) so I was excited to explore all of their meat alternatives. While at the checkout counter, the cashier mentioned how delicious the soy chorizo was. Holding up the line, we talked about the breakfast burritos she had just made that morning with the soy chorizo. I ran back to grab a couple packages. I was so excited to try it and add another breakfast food into my life!
I grew up with breakfast foods like cinnamon rolls, eggs, bacon, sausage, milk, biscuits and gravy, and etc. Pretty much everything not vegan! When switching to a vegan lifestyle, breakfast foods were the hardest meal to figure out. Finally, I have a breakfast recipe that is savory, a little spicy and quick to make. Add eggs for the non-vegans in your life!
This recipe is easy, 5 ingredients and less than 15 minutes! It’s so easy. Trader Joe’s Soy Chorizo is vegan and gluten-free too. If desired, add eggs into your breakfast burritos and top it off with avocado slices. Enjoy!
