If I want to eat a healthy lunch, I have to plan for it. I’m not much of meal prepper, but as long as I have it written down and all the necessary ingredients, I’m good to go. If I don’t have it planned out, I’ll end up picking something up or eating something that is not so healthy, like chips and cheese.
I am lucky enough that I get to come home for lunch during the week. My office is super close to my house and it is something I will never take for granted. However, it is still only an hour lunch break. I want time to relax, decompress from the morning, prepare for the afternoon, and enjoy my lunch. I hate when I have to eat super fast and have no time to enjoy my hour.
So in order to make sure I’m eating something healthy and that I get to actually enjoy it, I’ve compiled a few go-to recipes for my lunch that meets all those requirements. Just like my go-to dinner recipes, they aren’t anything fancy, but they get the job done and they are delicious. I still have my days when I would just rather pick something up (usually Chick-fil-A, if I’m being honest), but these lunch ideas are good for when I don’t have days like that.
Even if you don’t get to go home for your lunch break, these lunch ideas can easily be prepared the night before and warmed up, if necessary, at the office.

5 Go-To Quick, Easy & Healthy Lunch Ideas
Green Goddess Protein Salad
This is the most recent addition to my rotating lunch ideas. I found if from @kenzieburke on Instagram and it’s basically just romaine lettuce, cucumber, avocado, edamame, lemon juice, and hummus. I like to saute the edamame in a little olive oil and garlic salt. Sometimes I’ll throw on some chicken, if I have some prepared. It’s a quick and simple salad, but incredibly delicious and filling!
A quick fried rice recipe had been my go-to lunch for years. It still is something I eat on a regular basis. It’s so simple and quick, plus you can load up on all the veggies. My fried rice usually consists of Uncle Ben’s Ready Rice Brown Rice, Red Bell Pepper, Red Onion, Edamame, Shredded Carrots and Coconut Aminos. Cook the rice and saute the vegetables in a little olive oil, add it all in a bowl and drizzle the coconut aminos!
Avocado Chicken Salad
I first found this lunch idea in Kristin Cavallari’s cookbook, True Roots and now it’s become a go-to for me. I just purchase a rotisserie chicken, shred it up, add some red onions, avocado, celery, a tiny bit of mayonnaise, lemon juice, salt and pepper. You can add this to bread for a sandwich, put it on top of a bed of greens, or just eat it plain! Oh and you can make it once and have some for a couple days, which is always a win in my book.
This is basically the fried rice with a different flavor profile. I used to make this with turkey meat, but now, more often than not, I don’t even use the turkey. Just heat up some bell pepper, red onion and black beans, season with taco seasoning (I like making mine from scratch), and place on top of brown rice, add some avocado and salsa. Super quick and easy!
Spinach, Strawberry, Avocado Salad
My favorite summer salad and a quick, easy lunch idea! Spinach, topped with fresh strawberries, avocado, rotisserie chicken and almonds. I will sometimes add mozzarella if we have some and I also use the Primal Kitchen Avocado Oil Ranch for the dressing. Again, it’s a super simple salad, but incredibly filling and delicious!
As you can see, these recipes are nothing special, but they are quick and healthy which is all I really ask for when it comes to my lunch. Oh and filling because there is nothing worse than being hungry right after you eat. I also try to make a point in making extra of whatever we have for dinner so that I can have leftovers the next day. And when I want something REALLY quick and simple, I always keep ingredients on hand for avocado toast.
